Matilda’s Chocolate Cake Recipe

- 1 cup all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 teaspoons baking soda
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 3/4 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot water
- 1 teaspoon instant coffee
Instructions
- Preheat your oven to 150°C (300°F). Grease and flour two 9-inch round baking pans.
- In a large bowl, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, baking powder, and salt.
- Add the eggs, buttermilk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
- Dissolve the instant coffee in the hot water and stir it into the batter until well combined.
- Divide the batter evenly between the prepared pans.
- Bake in the preheated oven for 35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- Once the cakes have cooled, they are ready to be frosted according to your preference.
