Sugar Free Date Cookies Recipe
Ingredients
- 1 ½ cups quick oats
- ½ cup natural peanut butter (preferably from a fresh jar)
- 1 ½ cups pitted dates (soaked in hot water for 10 minutes)
Instructions
1. Preheat the Oven: Set your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
2. Make Oat Flour: Place the quick oats in a food processor and blend until they become a fine, flour-like consistency.
3. Combine Ingredients: Add the natural peanut butter and the soaked dates (drained) to the oat flour. Process until the mixture forms a sticky dough that holds together when pinched.
4. Shape the Cookies: Roll the dough into tablespoon-sized balls and place them on the parchment-lined baking sheet. Gently flatten each ball into a cookie shape; these cookies won’t spread during baking.
5. Bake: Bake for 10-12 minutes, rotating the baking sheet halfway through to ensure even cooking. At the 10-minute mark, check the bottoms—they should be golden brown, though the tops will remain light in color.
6. Cool and Store: Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack. Once cooled, store the cookies in an airtight container at room temperature for up to 7-10 days.
