2 medium green zucchini

20 wrappers of Wonton

2 large carrots

1/2 teaspoon soy sauce

1 teaspoon of sesame oil

1 teaspoon of nutritional yeast

2/3 cup of vegan milk

INSTRUCTIONS:

1) Start by grating the zucchini and carrots in the large holes of a box grater, then place them in a colander or strainer to drain off excess liquid.

2) Add salt and pepper to taste, then mix well with your hands or a spoon until the vegetables are evenly combined.

3) Place one teaspoon of sesame oil into a non-stick skillet set to medium-high heat. Once the oil has heated up, add the grated zucchini and carrots, and sauté for four minutes or until they begin to brown.

4) Add the flour and stir with a wooden spoon until it clumps into small pieces.

5) Turn down heat to medium and continuously stir the vegetables with the wooden spoon for one minute, then add in the vegetable broth and continue to stir until a thick, paste-like mixture is formed.

6) Sauté for three more minutes or until you no longer see large chunks of flour remaining.

7) Turn down heat to low and slowly add vegan milk, a little bit at a time. Stir constantly with the wooden spoon until the mixture is thick and begins to pull away from the sides of the pan.

8) Turn off the heat and stir in nutritional yeast.

9) Pour the mixture into a small bowl or onto a plate, then use your hands to shape it into small patties and set aside before serving
